These crispy mashed potato bites are a delightful vegan twist on traditional fried potatoes. They are golden brown on the outside and creamy on the inside, making them a perfect snack or side dish.
Ingredients:
- 3 large potatoes, boiled and mashed
- 1/4 cup breadcrumbs
- 2 tbsp nutritional yeast
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 2 tbsp olive oil
Instructions:
In a bowl, mix mashed potatoes with breadcrumbs, nutritional yeast, garlic powder, onion powder, salt, and pepper until well combined
Form small balls or bite-sized patties from the mixture
Heat olive oil in a skillet over medium heat
Fry the potato bites until golden brown and crispy on both sides, about 3-4 minutes per side
Remove from skillet and place on a paper towel-lined plate to drain excess oil
Serve hot with your favorite dipping sauce
