This Twice Baked Potato Casserole is a comforting and indulgent dish, perfect for family gatherings or potlucks. It combines the creamy texture of mashed potatoes with the savory goodness of cheese and bacon, all baked to perfection.
Ingredients:
- 6 large potatoes, baked
- 1/2 cup sour cream
- 1/2 cup milk
- 1/4 cup butter, softened
- 1 cup shredded cheddar cheese
- 1/2 cup chopped green onions
- Salt and pepper to taste
- 1/2 cup cooked and crumbled bacon optional
- 1/4 cup chopped fresh parsley optional
Instructions:
Preheat oven to 350F 175C
Cut baked potatoes into cubes and place in a large mixing bowl
Add sour cream, milk, butter, cheddar cheese, green onions, salt, and pepper to the bowl
Mix until well combined
Transfer the mixture into a greased baking dish, spreading it evenly
If using, sprinkle crumbled bacon over the top of the mixture
Bake in the preheated oven for 30 minutes, or until heated through and slightly golden on top
Remove from oven and garnish with chopped parsley before serving, if desired
