Ingredients:
- 4 boneless pork chops
- 1 cup fresh spinach, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1/4 cup chicken broth
- Fresh parsley for garnish
Instructions:
Before you start cooking, heat the oven to 375F 190C
Put chopped spinach, softened cream cheese, grated Parmesan, minced garlic, dried oregano, salt, and black pepper in a bowl
Mix everything together well
Cut a horizontal line through the side of each pork chop, being careful not to go all the way through
This will make a pocket
Put some of the spinach and cheese mixture inside each pork chop
If you need to, use toothpicks to hold it in place
More salt and black pepper should be added to the stuffed pork chops
Warm up the olive oil in a skillet that can go in the oven over medium-high heat
For two to three minutes on each side, sear the pork chops until they turn golden brown
Put heavy cream and chicken broth in a bowl and mix them together
Then, pour the mix over the pork chops in the pan
Place the skillet in an oven that has already been heated and bake for 20 to 25 minutes, or until the pork reaches 145F 63C inside
Serve the keto pork chops with spinach stuffed inside and a creamy sauce on top
Garnish with fresh parsley
