This soup is hearty and comforting, with potatoes, green beans, and crispy bacon in a creamy broth.
Ingredients:
- 4 potatoes, diced
- 1 cup green beans, trimmed and chopped
- 6 slices bacon, chopped
- 1 onion, diced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
In a large pot, cook the chopped bacon over medium heat until crispy
Remove bacon and set aside, leaving the bacon grease in the pot
Add diced onion to the pot and saut until softened
Add diced potatoes and chicken broth to the pot
Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes
Add chopped green beans and simmer for an additional 5 minutes, or until beans are cooked to your liking
Stir in heavy cream and cooked bacon
Season with salt and pepper to taste
Serve hot, garnished with chopped fresh parsley
